Site & Brief

"Every commission begins with a question of fit."

We travel to the site before we accept the commission. Feasibility, capital structure, and the principal's ambition are evaluated in confidence — and against our own criteria, which not every project meets. When both parties agree the venue should exist, the brief is signed, and the studio is engaged.

Concept & Design

"An identity, long before a name."

Every venue is given an identity long before it has a public one. That identity governs the aesthetic, the design language, the materials, the music, and the staff who will eventually inhabit it. Architecture, interiors, and brand are drawn in concert, by one studio, in one room.

Planning & Approvals

"The regulatory layer is led, not navigated."

Town planning, approvals, engineering coordination, licensing. We manage the regulatory and consultant layer that decides whether a venue can breathe — before construction begins, not during. Documentation is held to a higher tolerance than the contract requires: joinery to the millimetre, finishes to the sample, lighting to the lumen.

Procurement

"The supply chain that makes a venue feel unrepeatable."

Three decades of building has given the studio a procurement network most operators cannot access. We source globally, manage long-lead imports, and negotiate directly with the workshops and quarries our designs specify. Every venue carries the maker's mark — a commissioned piece, made nowhere else, that will stand in the room from the first night onward.

Construction

We oversee construction directly, not at arm's length. Three decades of build experience means issues are seen months before they arrive on site. Design intent is protected through every value-engineering conversation. The principal walks the build with us each Friday — the same hand that drew the room, on the floor that is becoming it.

We design the launch, manage the press, run the social channels, and hand over a venue with a guest list, a programme, and a first month of momentum. The room earns its character from the company it first keeps — and the studio remains responsible for that company through the opening season.

Grit & Grace

Società Fortezza was founded on a single belief: that a venue should feel inevitable. As if the venue could not have been any other way. Inevitability is the reason a venue holds its rates, its membership, and its relevance across decades rather than seasons.

Not styled. Not curated. Inevitable.

We hold to two opposing principles: Grit & Grace.

Grit is the work beneath the surface. Feasibility studied to the decimal. Sites pursued for years before they are signed. Contractors held to tolerances most clients never see. The discipline of a studio that has built before and intends to build again.

Grace is what the guest meets. The weight of the door. The temperature of the welcome. The half-second of silence before the music finds them. The chair that holds the conversation an hour longer than it should.

Roberto’s track record runs directly through hospitality: as a majority shareholder, Fortezza Group delivered Miss Moneypenny’s — a $1.75M social-dining venue on Noosa’s Hastings Street, designed with Paul Kelly Design and finished to a residential standard in timber, stone, and light. The venue drew international press. With Goldfish, it reflects how we work: a complete, end-to-end solution for premium hospitality — designed, built, opened, and run.
